Although I just celebrated 1 year of being meat free, I’m still always on the lookout for tasty vegetarian spins on some of my favorite classic dishes. While I was going through an old issue of Cooking Light, I found (and adapted) a great recipe for Vegetarian Enchiladas with Ranchero Sauce.
